Since Great British Bake off has been on Netflix I have spent HOURS binge watching it. I got a bit inspired (also now exams are finished and I’m at home I’ve kinda run out of things to do) and decided to have a go at raspberry and white chocolate cake. The recipe I used can be found here
My mum has quite a good collection of tins, and i presumed there would be a bundt cake tin in there somewhere, but sadly not, so I had to improv and do it into two regular ones. The original idea was to do a bit of a show stopper piece and have it multi-layered, however on assembly I soon realised this wouldn’t fit into any of our storage tins, or even the fridge for that matter. So it got turned into two smaller ones. I made a few other alterations to the recipe: firstly I added fresh raspberries into the batter; secondly I altered the icing so it was whipped cream and white chocolate, with more raspberries added. To decorate, I made some small meringues and coated some left over raspberries in white chocolate.
The end product was definitely a success (I keep on cutting ‘just a tiny slice’ telling myself it wont hurt but I’m sure I’ll regret it as soon as I see bikini pics). The cake is really dense but still manages to stay nice and moist. 8/10!
