I have always been a very big fan of key lime pie, and after years of eating the Waitrose version I decided to actually give it a go to see how mine compares.
You can find the recipe I used here (honestly don’t look at the amount of calories, it WILL scare you, so in this case ignorance is bliss)
Now I know this may be hard to believe, but the picture above actually IS the pie I made and not just one I found online. I think hours I have spent watching bake off actually have been useful. I would highly recommend this because WAM BAM it is like an explosion of taste in your mouth. The shop bought one really does pale into insignificance (soz Waitrose) next to the rich, zesty flavour of this. I used a tin that was 1cm smaller than they recommended and ngl I didn’t think all the mix was going to fit, but somehow it did. Also I ended up leaving off loads of the cream because there was A LOT, in the future I would probably only do it with 125ml instead of 300ml.
